Skinny Mini Pumpkin Pie Bites

I said it once and I’ll say it again…I love pumpkin! I haven’t had pumpkin pie this season (yet) so I decided to make a lighter and healthier miniature version of these little pies. This skinny version of pumpkin pies are moist and have the same flavor of pumpkin pie…They are packed with flavor and are perfectly light and fluffy in every bite.

Ingredients:
1 (8 ounce package) of low-fat whipped cream cheese; softened or at room temperature
1 cup canned pumpkin; plain
2 eggs; lightly beaten
1 tsp vanilla extract
1/2 cup whole wheat flour
1 tsp baking powder
1/2 cup sugar
1/4 tsp cinnamon
Topping:
Whipped cream, cinnamon

Steps:
1. Pre-heat oven to 350 degrees F. In a cupcake pan, line 12 muffin liners and spray with cooking spray or butter.

2. In a medium bowl, place cream cheese, pumpkin, eggs, and vanilla together and stir until smooth, light and fluffy. Add in flour, baking powder, sugar, and cinnamon. Continue to mix together until well combined. Spoon in mixture into cupcake liners (fill 3/4 to the top). Place in oven and bake for 25-30 minutes. Muffins will look crinkled.

3. Once baked, place on cooling rack until cooled completely. Once cooled, remove liners and place in refrigerator until ready to be served. Top with whipped cream and cinnamon.

Pumpkin Pie Oatmeal

Ingredients:

1 1/2 cup almond milk
1 cup oats
1 Tbsp maple syrup
2 Tbsp brown sugar
1/2 cup pumpkin puree
1 tsp cinnamon

Steps:
1. In a small saucepan on medium heat, add almond milk until it gets warm (about 5 minutes). Then add oats and stir constantly.

2. Once oats start to thicken, reduce heat and add pumpkin puree, syrup, sugar, and cinnamon. Stir until oats are cooked (about 7 more minutes).

Apple Cinnamon Pie Cookies

Yield: 8

Ingredients:

1 apple; chopped
1 tsp maple syrup
1 Tbsp brown sugar
1 ½ tsp cinnamon
1 Tbsp butter
1 tsp sugar
1 pie crust dough

Cinnamon Maple Frosting:
4 Tbsp powdered sugar
1 tsp maple syrup
½ tsp cinnamon
½ tsp milk

Whisk all together with a whisk for fork until well combined. Glaze should be slightly thick.

Steps:
1.Preheat oven to 350 degrees F. Cut pie crust into eighths with a sharp knife (they slices should look like pizza slices).

2. In a frying pan, melt butter and add chopped apples. Sautee until apples soften, then add syrup and sugars.

3.Once cooked, place a large spoonful of the apple mix onto pie crust slice and wrap tip of the slice around the rest of the pie crust.

4. Place filled pie crusts on a greased baking sheet and bake for 20-25 minutes.

5. Once cookies are done, let cool for 10 minutes and then with a spoon or fork, frost cookies with the cinnamon maple glaze.
