Healthy Turkey Chili

Yield: 8

Ingredients:
1 lb lean turkey meat
1 Tbps olive oil
1/2 large yellow onion
2 garlic cloves; minced
1 green bell pepper; chopped
2 cans (14.5 ounces) diced tomatoes
2 cans (16 ounces each) tomato sauce
1 can (16 ounce) kidney beans; rinsed and drained
1 can (16 ounce) black beans; rinsed and drained
1 Tbsp ketchup
1 Tbsp chili powder
½ tsp granulated garlic
1 tsp cumin powder
1 tsp salt
1 tsp brown sugar
1 tsp dried basil
low-fat sour cream (optional)
reduced-fat cheddar cheese (optional)
green onions (optional)

Steps:
1. In a large sauce pan, add olive oil and brown turkey meat with chopped onion, garlic, and bell peppers Cook until meat is brown.

2. Add chili powder, granulated garlic, cumin, salt, brown sugar, and basil. Stir until seasons meat is seasoned.

3. Add diced tomatoes, tomato sauce, kidney beans, and black beans. With a wooden spoon, mix until combined. Add ketchup and place lid on pot. Let simmer on low for 30 minutes, stirring occasionally.

4. Spoon into bowls and top with a dollop of sour cream and a sprinkle of green onions and cheese.

**I love eating cornbread with this hearty meal, it makes this dish complete 🙂

Homemade Protein Bars

Yield: 6

Ingredients:

2 ripe bananas
1/2 cup fresh blueberries
1 cup plain oatmeal
1 Tbsp flax seeds
2 Tbsp almond butter
3 Tbsp honey
1 egg white
1 tsp cinnamon
1 tsp vanilla
1/4 cup almond milk

Steps:
1. Mix ingredients together until well combined and spoon into greased cupcake tins (I used heart shaped silicone muffin tray) and bake 350 for 25 mins.

Pumpkin Pie Oatmeal

Ingredients:

1 1/2 cup almond milk
1 cup oats
1 Tbsp maple syrup
2 Tbsp brown sugar
1/2 cup pumpkin puree
1 tsp cinnamon

Steps:
1. In a small saucepan on medium heat, add almond milk until it gets warm (about 5 minutes). Then add oats and stir constantly.

2. Once oats start to thicken, reduce heat and add pumpkin puree, syrup, sugar, and cinnamon. Stir until oats are cooked (about 7 more minutes).

Mini Eggplant Pizzas

Ingredients:
1 eggplant; cut into ½ inch thick slices
¾ cup tomato sauce
½ cup mozzarella cheese
1 Tbsp olive oil
1 Tbsp fresh basil
garlic salt and pepper to taste

Steps:
1. Preheat oven to 375 degrees F. Spread eggplant slices on a greased cookie sheet and brush olive oil on each slice and then sprinkle garlic salt and pepper. Bake eggplant slices for 12 minutes. Let cool and leave oven on.

2. Top each eggplant with tomato sauce, cheese, and fresh basil. Put back in oven until cheese is melted.

Healthy Pumpkin Oat Bread

Yield: 12

Ingredients:

1 cups whole-wheat flour
½ cup oat flour
¼ cup rolled oats
1 ½ teaspoons cinnamon
½ teaspoon ground ginger
½ teaspoon nutmeg
⅛ teaspoon cloves
1 teaspoon baking soda
¼ teaspoon baking powder
½ teaspoon salt
1 egg
½ cup apple sauce
½ cup honey
¼ cup almond milk
½ teaspoon vanilla
1 cup pumpkin puree

Steps:
1. Preheat oven to 350 degrees.

2. In a large bowel mix together the dry ingredients (oat flour, oats, cinnamon, ginger, nutmeg, cinnamon, cloves, baking soda, baking powder, and salt.

3. In a separate bowel lightly mix the wet ingredients (egg, apple sauce, honey almond milk, and vanilla)

4. Make a hole in the center of the dry ingredients and pour in the wet ingredients and fold with a spatula. Do not over mix!

5. Fold in the pumpkin puree until everything is combined.

6. Generously grease a large loaf pan or put muffin liners in a muffin pan and then pour in the batter. (I like to use loaf pans for this recipe but you can use cupcake pans as well!)

For a loaf bake for approximately 35– 40 minutes and for muffins bake for approximately 18 – 22 minutes. Check to see if done by making sure a toothpick inserted comes out clean.
