Blueberry Mint Refresher

Summer days are approaching us and that means cool and light refreshing drinks will be coming our way as well! If you are looking for a healthy and light drink this summer- this refreshing beverage is perfect—I love blueberries and they are loaded with all kinds of antioxidants and have many health benefits. It is recommended to eat them often so I am putting them in my drink! As you can see I do like my sweets… but I do also love to eat healthy and cook with fresh fruits and vegetables as often as I can.

Blueberry Mint Refresher

Add some freshness to your summer with this refreshing sparkling beverage!


1  cups blueberries, plus more for garnish

1/2  cup  honey

1 bunch fresh mint, plus extra sprigs

2 quarts sparkling water


  1. Place 1 cup of blueberries, honey and mint in a medium saucepan. Bring to a simmer and continue to heat for about 5 minutes, stirring constantly until the berries burst. Remove from heat and cool. The mixture will be a bit thick.
  2. If you don't want any pulp, gently squeeze berry mixture through a small strainer into an airtight container. If you keep the pulp then just simply add to a container and refrigerate. This will make a blueberry syrup. Chill and then combine ¼ cup syrup with ¾ cup sparkling water for a single serving. Pour over ice and garnish with whole blueberries, a sprig of mint!

If you wanted to make this in a large batch, you can serve this beverage in a large pitcher or bowl.

This recipe is great because you can alter the fruits to your choice. I used blueberries this time but next time I want to try strawberries or raspberries. You will be able to preserve the syrup in the fridge for about a week.  If you want more flavor, use lemon or lime flavored sparking water.


Cucumber, Lemon, & Mint detox water

The last few detox waters I made have been a MAJOR hit! I have received tons of great feedback from them all so I am always in the makings of more delicious and refreshing waters. After all, water is the most important drink so why not make it extra delicious!? 😉

All you need is:
About 5 cucumber slices
3 lemon slices
About 4-6 mint leafs

Place ingredients in a mason jar and add water to the top. Let sit over night so the water can absorb all of the nutrients. I highly recommend making a large batch of this because you are going to want more…the best part about it is, the more you drink the best it is for you!

Summer Watermelon with Mint & Feta Cheese


I recently just starting eating this treat and it definitely makes me feel like summer is here..well almost. There is nothing better than a cold watermelon right out of the fridge on a hot sunny day. The combination of the 3 flavors go together so perfectly its amazing to say the least!

All you need:
Sliced watermelon
Fresh mint; coarsley chopped
Feta Cheese

Sprinkle mint and feta cheese all over fresh watermelon and enjoy! Easy perfection.


Fruit Salad with Citrus Honey Mint dressing


I love fruit especially with this dressing. It is best served cold because the mint and citrus flavors make it so refreshing. You can use any fruit that you like, the possibilities are completely endless! You can eat this for a healthy breakfast, a snack, or even side dish!

Yield: 6

1 cup fresh blueberries
1 cup fresh pineapple
1 cup fresh cantaloupe
1 cup fresh strawberries
2 Tbsp honey
1/2 of a small lemon
1/2 of a small lime
3 Tbsp fresh mint; coarsely chopped

1. In a small bowl, combine honey, the juice of half of the lime and lemon. Place in microwave to melt for 15 seconds and whisk with a fork. Place fruit in large serving bowl and drizzle dressing. Add mint and mix in with fork until fruit is evenly coated.

Orange Mint Detox Water


I made another overnight detox water creation and it is too refreshing, especially if you like the taste of a citrus orange and spicy mint flavor!

All you need is
1/2 orange; sliced
1/4 cup mint (I like to leave them whole)

Put in orange slices and mint into a mason jar, fill with water and put in refrigerator overnight. The next morning you’ll have a refreshing glass of water!
