A new giveaway is here and your in for a sweet frozen treat with Nada moo’s ice cream! Nada Moo’s is one of the few who make coconut ice cream that is creamy, smooth, and delicious just like ice cream except it doesn’t have any eggs, dairy, or sugar!  The main ingredients in this healthy treat is coconut milk, tapioca, and agave nectar. This sweet treat is perfect for those who are lactose intolerant and are gluten sensitive. You can find Nada Moo at just about any Lucky’s, or Save Mart grocery stores. Annie’s Giveaway–What’s your favorite Annie’s Product?

We have another fun giveaway all thanks to Annie’s Homegrown! You may have been familair with Annie’s Homegrown products the same way I was…by the little bunny/rabbit shapped Mac N Cheese, crackers, and even fruit snacks! As I became more familiar with healthy eating, I started buying Annie’s salad dressing (I think I may have tried every flavor by now!). Annie’s Homegrown products are all natural, wholeseome, and organic. They are also launching all kinds of new and exciting products such as: new salad dressing flavors, frozen pizzas, entrée meals, and mini snack size treats! You will all have to and try at least one of these products out, so be sure to look for the little bunny logo the next trip you make to the grocery store!

Below is one of my favorite Annie’s recipes to make:
Asain Sesame Kale, Mushroom, and Aspargus Quinoa Salad:

Ingredients:
1 cup quinoa
2 cups water
1 bunch of aspargus, sliced into 1 inch pieces
1 bunch of kale; coarsley chopped
1 cup mushrooms; sliced
1 tsp olive oil
Salt and Pepper to taste
2 Tbsp Annie’s Homegrown Asain Sesame dressing

Steps:
1. In a medium sauce pan bring 2 cups of water to a boil. Add quinoa and let simmer for 15-20 minutes until water is absorbs and quinoa is fully cooked.

2. In a medium frying pan add in olive oil asparagus, kale, mushrooms, and sprinkle salt and pepper. Saute for 7-10 minutes and then add to cooked quinoa. Pour dressing onto salad and mix until everything is combined to perfection. Optional: top with avocado! Easy peasey! 🙂

Chinese Chicken Cobb Salad with a Ginger Sesame Vinaigrette

I love Cobb salads and I also love Chinese Chicken salads so I decided to combine the two! You can even add shrimp or another type of seafood or meat if you would like as well.

Yield: 2

Ingredients:
4 cups romaine lettuce; chopped
1 avocado; cubed
4 ounces of grilled chilled; chopped
1 (12 ounce) can mandarin oranges; drained
1 (12 ounce) can corn; drained
1/4 cup green onions; chopped
1/4 cup red bell peppers; chopped

Ginger Sesame Vinaigrette
1 Tbsp sesame oil
1 Tbsp honey (heat in microwave for 10 seconds to melt)
1 tsp soy sauce
1 tsp grated ginger
1/2 tsp garlic powder
3 Tbsp rice wine vinegar

Steps:
1. In a medium bowl, whisk together sesame oil, slightly melted honey, soy sauce, ginger, garlic powder, and vinegar. Add lettuce and toss together with tongs until evenly coated.

2. Assemble salad on plate or bowl with the salad on the bottom. Then top with rows of mandarin oranges, bell peppers, avocado, chicken, corn, and green onions.

Smoked Salmon & Kale Frittata

Yield: 6

Ingredients:
6 whole eggs
1 Tbsp olive oil
1 small red onion; chopped
2 cloves garlic; chopped
1/2 tsp salt
1/2 tsp pepper
1/2 tsp granulated garlic
4 oz smoked salmon; coarsely chopped
3 cup kale; chopped
1/4 cup parsley; finely chopped
1/4 cup parmesan cheese

Steps:
1. Preheat oven to 350 degrees F. In a frying pan on medium heat, add olive oil, onions, and garlic. Season well with salt, pepper, and granulated garlic. Sauté until kale is wilted.

2. In a medium mixing bowl, crack eggs and whisk until combined. Add kale mixture in with a wooden spoon. Add in coarsely chopped smoked salmon and parmesan cheese. Lightly grease a pie dish with olive oil and add mixture. Bake for 35 minutes or until top is golden brown. Garnish with a sprinkle of parsley and parmesan cheese.

Cauliflower Garlic “Mashed Potatoes”

Just to make it clear, there are NO potatoes in this healthy dish…and I promise you will not be able to tell the difference..it’s that good!

Yield: 6

Ingredients:
1 head of cauliflower; cut into chunks
1/4 cup yellow onion; chopped
4 cloves of garlic; chopped
1/4 cup chicken broth
1 tsp salt
1 tsp pepper
1 tsp garlic powder
2 Tbsp olive oil
1 Tbsp chives; chopped
Parmesan cheese (optional; highly recommended)

Steps:
1. Bring a large pot of water to a boil, then add chunks of cauliflower. Boil until cauliflower is semi-soft..about 6 minutes. After drain and add 1 Tbsp of olive oil, onions, and garlic to a medium sized frying pan. Add in cauliflower pieces and season with salt, garlic powder, and pepper. Cook for 5 minutes to set in flavor of garlic and onions.

2. Add everything from pan into a medium-large bowl. Add in olive oil and chicken broth and with a potato masher, food processor, or an immersion blender (what I used and is super easy!), blend until everything is combined. Sprinkle with chives and parmesan cheese. So delicious and good for you!
