Annie’s Giveaway–What’s your favorite Annie’s Product?

We have another fun giveaway all thanks to Annie’s Homegrown! You may have been familair with Annie’s Homegrown products the same way I was…by the little bunny/rabbit shapped Mac N Cheese, crackers, and even fruit snacks! As I became more familiar with healthy eating, I started buying Annie’s salad dressing (I think I may have tried every flavor by now!). Annie’s Homegrown products are all natural, wholeseome, and organic. They are also launching all kinds of new and exciting products such as: new salad dressing flavors, frozen pizzas, entrée meals, and mini snack size treats! You will all have to and try at least one of these products out, so be sure to look for the little bunny logo the next trip you make to the grocery store!

Below is one of my favorite Annie’s recipes to make:
Asain Sesame Kale, Mushroom, and Aspargus Quinoa Salad:

Ingredients:
1 cup quinoa
2 cups water
1 bunch of aspargus, sliced into 1 inch pieces
1 bunch of kale; coarsley chopped
1 cup mushrooms; sliced
1 tsp olive oil
Salt and Pepper to taste
2 Tbsp Annie’s Homegrown Asain Sesame dressing

Steps:
1. In a medium sauce pan bring 2 cups of water to a boil. Add quinoa and let simmer for 15-20 minutes until water is absorbs and quinoa is fully cooked.

2. In a medium frying pan add in olive oil asparagus, kale, mushrooms, and sprinkle salt and pepper. Saute for 7-10 minutes and then add to cooked quinoa. Pour dressing onto salad and mix until everything is combined to perfection. Optional: top with avocado! Easy peasey! 🙂

Easter Peeps Rice Krispy Treats

Rice krispy treats are so easy to make and take almost no time at all! Everyone loves peeps especially during the spring time so what a cute and fun way to add a festive Easter twist!

Yield: 20

6 cups of rice cereal
5 cups of mini marshmallows
1 Tbsp butter
1/2 cup sprinkles
1/4 cup white chocolate
20 marshmallow peeps

Steps:
1. In a large bowl add cereal and set aside. In a microwavable safe bowl melt together the marshmallows and butter until slightly melted, usually about 1 1/2 minutes. Pour marshmallow mixture into large bowl and stir with a spatula until combined.

2. Add in sprinkles until they are mixed in evenly. Then lightly***grease baking sheet with cooking spray and pour rice krispys into pan pressing down with a spatula to make it even.

3. Melt white chocolate and with a butter knife or teaspoon, dab about 1/2 tsp of white chocolate onto each peeps and place on top of rice krispy treats.

*You can place the peeps any way you like on treats. I like and recommend placing them about an inch apart from each other so when you cut them, each rice krispy square will have a peeps. SO cute 🙂

Chocolate Dipped Shortbread Cookies

Yield: 10

Ingredients:
1 1/2 cup flour
3/4 cup butter; chilled and cubed
3/4 cup sugar
1/2 cup sprinkles
1 tsp milk
1 tsp vanilla extract
1/2 cup melting chocolate

Steps:
1. In a food processor, add flour and chilled butter and mix until flour looks crumbly. Add sugar, milk, and vanilla and continue mixing until dough is formed. Add in sprinkles and mix in gently with hand until combined.

2. Line a cookie sheet with parchment paper and form dough into a large rectangle, covering the cookie sheet. Let chill in refrigerator for 20 minutes.

3. Preheat oven to 325 degrees F. Cut chilled dough into 1 inch cubes. Place on another lined cookie sheet 1/2 inch apart from each other. Bake for 20-25 minutes.

4. In a small bowl, melt chocolate for 2 minutes. Dip half of cooled cookie in chocolate and then dip immediately after in sprinkles. Let cool on foil or wax paper for 5 minutes, or until chocolate hardens.

Circus Animal Cookie Rice Krispy Treats

Circus Animal Cookies were my favorite cookies growing up. I would find in my lunch box at school that my Mom packed. They bring back so many memories of my childhood so I couldn’t resist and added them to one of my favorite treats, Rice Krispy Treats!

Circus Animal Cookie Rice Krispy Treats

Yield: 8

Ingredients:
6 Cups of Rice Krispies Cereal
16 ounces mini marshmallows
3 Tbsp butter
1 bag of animal cookies; coarsely chopped
1 cup of melted candy (white chocolate)
Sprinkles (optional)

Steps:
1. In a large bowl, add cereal and chopped cookies, mix and set aside.
2. In a large microwaveable bowl, add butter and marshmallows and microwave for 2 minutes, or until melted. With a spatula, mix marshmallow mixture until combined and add to cereal bowl.
3. Mix until cereal is coated with marshmallow mixture. In a 13 x 9 baking pan, add mixture and press down with spatula. This will make the treats firm and stay together. Set aside for 5 minutes to cool.
4. Meanwhile, melt chocolate in microwave until melted (usually 2 minutes). Pour on top of treats and spread evenly with spatula. Add sprinkles and let settle for 30 minutes, or until chocolate is hard. Once chocolate is hard, cut into squares and enjoy!!

*Too speed up the process, I always put my rice krispy treats in the refrigerator for 15 minutes before cutting and serving.

*Instead of melting chocolate chips, I but the “Chocolate/White Chocolate candy melts”, it is usually for candy because it hardens nicely and quickly. You can find them at Michael’s craft store, Target, or Safeway in the baking section near the sprinkles.
