Cinnamon Streusel Almond Banana Muffins

I love buying too many bananas sometimes because I know I will have a good excuse to make treats like these muffins. These little muffins will melt in your mouth..the cinnamon streusel topping really puts these little guys into a different category. The cream cheese adds an extra rich and creamy texture that makes them extra moist. You will have to try one to know what I’m talking about!

Yield: 2 dozen (24 muffins)

Ingredients:
3/4 cup butter; softened
8 oz. cream cheese; softened
1/2 cup white sugar
1 cup brown sugar
1/2 cup honey
2 large eggs; at room temperature
3 cups all-purpose flour
2 tsp cinnamon
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
3 medium mashed bananas (make sure they are ripe)
1/2 cup chopped roasted almonds
1 tsp vanilla extract

For the streusel topping:
1/4 cup butter; softened
1/4 cup brown sugar
1 tsp cinnamon
3/4 cup oatmeal

Steps:
1. Preheat oven to 350 degrees F. In a mixing bowl, beat butter and cream cheese on medium speed until creamy. Gradually add in sugars and honey beating until light and fluffy.

2. Add in eggs (1 at a time) and blend until combined. Add in flour, cinnamon, baking powder, baking soda, and salt and mix until blended. Stir in mashed bananas, almonds, and vanilla.

3. For the crumble streusel topping..in a medium bowl, add butter, brown sugar, cinnamon, and oatmeal. Mix with a fork until its crumbly.

4. Heavily grease muffin pans and scoop muffin mix into pans about 3/4 of the way full. Top muffins with streusel crumble and bake for 25-30 minutes or insert tooth pick until center comes out clean. Let muffins cool for 10 minutes and enjoy! These also make a great morning snack or breakfast.

Overnight Peanut Butter & Nutella Oats

These overnight oats have recently become my new favorite breakfast. If you’ve never tried them before you definitely must give them a try! I make all kinds of different overnight oats and I am excited to post more about them. They are quick and easy to make. They also come in handy on mornings when I’m running late for work because I can take them on the go. These oats are so good they taste like candy…and they are healthy!

Yield: 1

Ingredients:
1 cup almond milk; unsweetend vanilla
1/2 cup oats
1 Tbsp peanut butter
1/2 Tbsp Nutella
1 tsp honey (optional)
1 Tbsp mini dark chocolate chips

Steps:
1. Mix all ingredients in a bowl, cover, and let sit overnight. EASY and top with your favorite fruit when ready to eat.

Baked Parmesan Chicken Strips

I like chicken but I don’t love it..I just never have unless its cooked in some amazing way. I had some leftover chicken breasts in my fridge and to be honest they are my least favorite part of the chicken because it is the driest. I’ve never been the one to eat chicken strips or order them in restaurants as a kid so I decided to come up with a “grown-up” version, which is much more tastier and delicious than any other chicken strips I’ve ever had. Try dunking these crispy strips in marinara or pesto sauce, I even combined the two!

Yield: 6

Ingredients:
3 chicken breasts; sliced into 1/2 inch strips
1 cup Italian Seasoned bread crumbs
1/2 cup parmesan cheese
1/2 cup whole wheat flour
1 whole egg; beaten
1/2 tsp salt
1/2 tsp black pepper

Steps:
1. Preheat oven to 425 degrees. Cut chicken breast into 1/2 inch strips. Place breadcrumbs and parmesan cheese in a bowl and set aside. Place beaten egg and flour into 2 separate bowls.

2. Dip chicken strips on both sides into flour, then dip into the egg mixture, then dip in the parmesan breadcrumb mixture.

3. Place on baking sheet lined with parchment paper and bake for 15 minutes on one side, then with tongs flip and bake on other side for another 10 minutes. Enjoy this with some marinara sauce and pesto, the combination is delicious!

Cowboy Cookies

Yield: 8

Ingredients:
3/4 cup butter; room temperature
1 cup brown sugar
1 egg
1/4 cup sugar
1/4 cup honey
1 tsp vanilla
2 cups uncooked oatmeal
1 cup rice crispy cereal
1 cup flour
1 tsp salt
1/2 tsp baking soda
1/2 cup chocolate chips
1/2 cup shredded coconut*optional (I personally don’t like coconut but I heard it would go great with this recipe!)

Steps:
1. Preheat oven to 350 degrees F. With a mixer, beat together butter, sugars, honey, and vanilla until combined..texture will become creamy.

2. Reduce speed on mixer and add in oatmeal, rice crispy cereal, flour, salt, baking soda, and chocolate chips. Mix until cookie dough is formed.image

3. This is a little trick that works great and makes all of your cookies the same shape! With a mini ice-cream scooper, scoop dough balls and place on an cookie sheet lined with parchment paper. Place 1 inch away from eachother and bake for 14-16 minutes. Let cool and then serve! These are also delicious for dunking in a cold glass of milk 🙂

Cauliflower Garlic “Mashed Potatoes”

Just to make it clear, there are NO potatoes in this healthy dish…and I promise you will not be able to tell the difference..it’s that good!

Yield: 6

Ingredients:
1 head of cauliflower; cut into chunks
1/4 cup yellow onion; chopped
4 cloves of garlic; chopped
1/4 cup chicken broth
1 tsp salt
1 tsp pepper
1 tsp garlic powder
2 Tbsp olive oil
1 Tbsp chives; chopped
Parmesan cheese (optional; highly recommended)

Steps:
1. Bring a large pot of water to a boil, then add chunks of cauliflower. Boil until cauliflower is semi-soft..about 6 minutes. After drain and add 1 Tbsp of olive oil, onions, and garlic to a medium sized frying pan. Add in cauliflower pieces and season with salt, garlic powder, and pepper. Cook for 5 minutes to set in flavor of garlic and onions.

2. Add everything from pan into a medium-large bowl. Add in olive oil and chicken broth and with a potato masher, food processor, or an immersion blender (what I used and is super easy!), blend until everything is combined. Sprinkle with chives and parmesan cheese. So delicious and good for you!
