Bunny Spinach Dip

I love spinach so of course I love spinach dip! What I love even more is this cute Bunny I made out of it. This app is perfect for Easter and everyone will be sure to enjoy it. You can use your favorite vegetables and crackers to dip—the possibilities are endless!

I doubled this recipe because I made it for my work’s potluck so you can still make this by making one batch: just use 1 cup of mayo, 1 cup of sour cream, 1 bag of spinach and 1 packet of Knorr® mix. You can assemble it the same—just don’t take as much bread out of the bread bowl. Easy peasy! 🙂

Bunny Spinach Dip

Bunny Spinach Dip

This dip is almost too cute to eat!

Ingredients

3 bags of spinach

2 tsp. olive oil

Garlic powder, salt and pepper for extra seasoning

2 cups of mayonnaise

2 cups light sour cream

2 packs of Knorr® vegetable dip mix

1 bread bowl

1 baguette

1 cucumber; sliced

Celery sticks

1 bag of carrot sticks

Pita Chips; optional for dipping

Instructions

  1. Bring a medium/large pan to medium heat and add olive oil and spinach. Sautee for about 5 minutes until spinach is cooked.
  2. Drain all the excess water out of spinach in a colander and let cool for about 10 minutes.
  3. Chop cooled spinach and place in a medium bowl. Add mayonnaise, sour cream and Knorr® dip mix. Stir until combined.
  4. For the Bunny’s belly: cut the center of your bread bowl in the shape of an oval or circle (I used an olive loaf because that’s all Nob Hill had at the time). Make sure to SAVE the top you cut because you need this for the Bunny’s face! Take out extra bread and to make a bowl out of it. Place spinach dip in bread bowl and place in the refrigerator.
  5. For the Bunny’s ears: cut the ends off of the baguette; about 4 inches long. Slice the remaining baguette to dip! For the Bunny’s face: use the round piece from the bread bowl and use sliced carrot sticks for the eyes and nose and a piece of sliced celery for the mouth. For the whiskers, slice a stick of celery diagonally and cut in half.
  6. Assemble Bunny on a cookie sheet lined with foil—place the belly, face and ears. Place cucumber slices on the bottom (for the grass), then place slices of baguettes, more cucumbers and carrots. Enjoy this cute app!

Easter Bunny Peep Pops

Spring is finally here–happy first day of Spring everyone! I love it when I can whip up a sweet treat that only takes a few minutes and has a few ingredients…. and most importantly is super cute like these pops!

These cute Easter bunnies are so adorable and so easy to make! They are also fun to make because you can make them however you want! I love marshmallows so I love when I see Peeps displayed at grocery stores this time of year. I feel like Peeps are only around for such a short amount of time and they don’t get used as much as they should. Kids will love this recipe, I know my 2 year old Goddaughter did! When I gave her a treat bag full of these, she was so happy to see this colorful treat and the first thing she ate was the Peep, of course!

These treats are so adorable and will put a smile on anyone!

Ingredients

12 pretzel rods

12 Peeps (I used blue and pink bunnies)

1 cup white chocolate candy melts

Sprinkles

Instructions

  1. Line a baking sheet with foil.
  2. Melt chocolate in microwave for 1 ½ minutes, stirring every 30 seconds until melted and smooth. Pour melted chocolate in a drinking glass or mug.
  3. Dip and or spoon each rod to cover about ½ the pretzel in the chocolate.
  4. Scrape excess chocolate off on edge of the cup. Smooth out chocolate with a spoon or knife so it is dipped evenly and smoothly on the rod.
  5. Sprinkle each rod with your favorite sprinkles and place on baking sheet. Spoon about a ½ tsp. of melted chocolate on the back of a peep and position on rod to set. Repeat until finished!
  6. Let each rod set for about 15 minutes, you can also place them in the refrigerator to cool and harden faster. Enjoy these adorable sweet treats!

There is just something about Peeps that makes me happy, maybe because they are so cute! Does anyone else feel that every Holiday comes and goes too fast? I always feel so rushed to enjoy all the festive treats that come once a year, so I might as well make them when I can! Who doesn’t love a cute and delicious sweet treat anyways?

This mix is filled with Easter Cadbury chocolate eggs because what would Easter be without them? Plus, it’s another great excuse to buy candy..at least for me! This mix is addicting so enjoy it while they last 🙂

Ingredients

6 cups Rice Chex Cereal

2 cups White Chocolate Melts

1 1/2 cup. shredded coconut

2 cups Mini Cadbury Eggs

1 cup marshmallows

Red food coloring (optional)

Instructions

  1. Place Chex cereal in a large bowl and set aside.
  2. In a microwave proof bowl, melt white chocolate melts in the microwave and stir until smooth.
  3. Pour white chocolate over cereal and gently fold until coated. (If you want to make half of your mixture pink, save half of the melted chocolate and add about 3 drops of food coloring. Mix until light pink, then mix in cereal).
  4. Put one cup of the shredded coconut in a large plastic bag and pour the chocolate coated cereal in, then add the other cup of shredded coconut. Shake bag until coated in coconut
  5. Pour out onto foil or a cookie sheet and let cool.
  6. Add Mini Cadbury Eggs and marshmallows and serve!

Perfect M&M Pudding Cookies

Easter is right around the corner so making these cookies was only necessary. Who knew that by adding a few tablespoons of pudding mix would make these cookies out of this world! I also made these in about 10 minutes and so can you. You can make these all season long by adding different M&M’s. Of course I went with the spring edition this time. I love how these cookies make the perfect cookie shape after you bake them. Did I mention they also go perfect with a tall glass of milk?!

Ingredients:
1 stick (1/2 cup) unsalted butter; softened
1/2 cup granulated sugar
1/2 cup packed light brown sugar
1 large egg
1/2 teaspoon pure vanilla extract
1-1/2 cups all purpose flour
3 tablespoons Instant vanilla pudding mix
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup chocolate chips
1 or 1-1/2 cups M&M’s(I used the Spring edition!)

Steps:
1. Preheat oven to 350 degrees F and line a large baking sheet with a silpat liner or parchment paper.

2. In a large mixing bowl cream your butter and sugars until well combined. Add your egg and vanilla mixing to combine. Add your flour, pudding mix, baking soda and salt. Mix until well combined. Fold in chocolate chips and M&M’s.

3. With a mini ice-cream scooper, place dough 1 inch apart from each other. Bake for 10-12 minutes until cooked through and golden brown. Let cool for 10 minutes once done and enjoy!

Easter Peeps Rice Krispy Treats

Rice krispy treats are so easy to make and take almost no time at all! Everyone loves peeps especially during the spring time so what a cute and fun way to add a festive Easter twist!

Yield: 20

6 cups of rice cereal
5 cups of mini marshmallows
1 Tbsp butter
1/2 cup sprinkles
1/4 cup white chocolate
20 marshmallow peeps

Steps:
1. In a large bowl add cereal and set aside. In a microwavable safe bowl melt together the marshmallows and butter until slightly melted, usually about 1 1/2 minutes. Pour marshmallow mixture into large bowl and stir with a spatula until combined.

2. Add in sprinkles until they are mixed in evenly. Then lightly***grease baking sheet with cooking spray and pour rice krispys into pan pressing down with a spatula to make it even.

3. Melt white chocolate and with a butter knife or teaspoon, dab about 1/2 tsp of white chocolate onto each peeps and place on top of rice krispy treats.

*You can place the peeps any way you like on treats. I like and recommend placing them about an inch apart from each other so when you cut them, each rice krispy square will have a peeps. SO cute 🙂
