Simple Smoked Salmon Flatbread

I love smoked salmon on anything, especially bagels and cream cheese for breakfast or lunch! I had a ton of pita bread left over from the Toufayan Bakeries recipe contest (see my recipe here)! I hosted a brunch a few weeks ago and made these quick and delicious flatbreads! The best part about this is the simplicity of this beautiful brunch item.  It takes less than 10 minutes to put together and everyone will love them–you can also make these on plain cooked pizza dough or even sliced bagels or mini bagels. Smoked salmon and cream cheese really goes great with everything and anything. A sprinkle of fresh dill makes this extra delicious!

Simple Smoked Salmon Flatbread

Ingredients

3 Pita Bread rounds (I used Toufayan’s Pita Bread)

3 Tbsp. cream cheese with chives (you can also use plain)

4-6 ounces of sliced Smoked Salmon

Fresh dill for garnish

Instructions

  1. Preheat oven to 350 degrees F. Place pita bread rounds on a baking sheet and bake for 10 minutes until toasted.
  2. Spread about 1 tablespoon of cream cheese onto each pita round. Place sliced smoked salmon on top and garnish with fresh dill.
  3. Cut each round in half and enjoy!

Easy Mediterranean Dip

This delightful summer appetizer is perfect for any occasion. This is such a quick and easy appetizer that everyone will be sure to love…or even if you are snackin’ alone. The best part about this is that it’s healthier than most delicious dips.  Your guests will be surprised when they go in to dip because there is a hidden layer of the seasoned cream cheese on the bottom, that pairs so well with the hummus. You can serve this dip with a pita chips, or you can also bake your own. So dip in to this recipe!

Easy Mediterranean Dip

Easy Mediterranean Dip

This healthy 2 layer dip is loaded with fresh Mediterranean flavors!

Ingredients

1 8 ounce package of whipped cream cheese (this makes it fluffy, you can also use regular or reduced fat cream cheese)

1 Tbsp fresh lemon juice

1 tsp Italian Seasoning

2 cloves of garlic; minced

1 1/2-2 Cups of prepared hummus (I used Trader Joe's Mediterranean Hummus because its my favorite)

1 cup cucumber; chopped

1/2 cup Kalamata olives; chopped

1/2 cup crumbled feta cheese

1/2 cup tomatoes; chopped

1/4 cup green onions; sliced

Instructions

  1. In a mixing bowl, combine the cream cheese, lemon juice, Italian seasoning, and garlic and mix with an electric mixer until combined.
  2. Spread the cream cheese mixture on a serving dish/platter evenly with a spatula. Spread the hummus on top of the cream cheese mixture. Sprinkle the cucumbers, olives, feta cheese, tomatoes, and green onions on top. Refrigerate for 1-2 hours before serving, then serve with pita chips and/or fresh veggies!

Baked Crab Rangoons

They say you should never go to the grocery store hungry..because you just shouldn’t. Well I did one day and I passed by the refrigerated aisle that had wonton wrappers. I usally don’t ever crave wontons but that day I sure did. I also remembered that I had cream cheese in my fridge and that’s when I came up with creating this; simply by passing the seafood section where the crab is! I’ve only had crab rangoons a few times, and the few times I’ve had them they were delicious; but they were fried. I’m wanted to skip the frying part and bake them instead.  I didn’t really expect them to turn out as perfectly as they did but I am sure glad I gave it a try! Dunk these into soy sauce for the perfect bite!

Baked Crab Rangoons

These crunchy on the out-side, creamy on the inside crab wontons make the perfect appetizer! They are also quick and easy to make!

Ingredients

8 ounces of low-fat cream cheese

8 ounces of immitation crab meat; chopped

1 clove of garlic; minced

2 green onions; thinly sliced

1 Tbsp chives; thinly sliced

1 1/2 tsp sesame oil

1/2 tsp soy sauce

1 tsp Worcestershire sauce

Salt and Pepper to taste

2 eggs

24 2-inch won ton wrappers (rounded shaped)

Instructions

  1. Preheat oven to 400 degrees F. In a large mixing bow, mix together the cream cheese, crab meat, garlic, green onions, chives, sesame oil, soy sauce, worcesteshire sauce, and salt/pepper. Mix until everything is combined.
  2. Take about 1 Tablespoon of the crab filling and place onto the center of each wonton. Beat the eggs and then brush onto the edges of the wonton. Press together with your fingers until they are sealed. Take a fork and press on the edges.
  3. Place wontons onto a greased cookie sheet. Brush the tops of the wontons with the remaining egg wash (this will make them nice and golden). Bake for 12-15 minutes, or just until golden brown. Serve with soysauce and enjoy!

Cinnamon Roll Cookie Bars

There is nothing better than the smell of cinnamon rolls baking in the oven. Cinnamon Rolls are definitely one of my favorite indulgences, especially for breakfast! When I came across this recipe I thought it was too good and easy to be true.  They  smelled exactly like cinnamon rolls baking in the oven and the only  difference is it took 10 minutes to make, thats it! You really need to try this!

Yield: 18

Ingredients:
Bars
1 box Vanilla Cake Mix
1 box Cook and Serve Vanilla Pudding
3/4 cup butter, melted
1/2 cup light brown sugar
2 eggs
1 Tbsp water
2 Tbsp cinnamon
Frosting
1 (8 oz) block cream cheese, room temperature
1/4 cup butter, room temperature
5 cups powdered sugar
*optional ~ Cinnamon Sugar to garnish
3 Tbsp sugar + 1 tsp cinnamon

Steps:
1. Preheat oven to 350 degrees F. Spray 9×13 baking dish with cooking spray, set aside.
In large bowl combine all ingredients for the bars. Stir until there are no lumps.

2. Spread into prepared baking dish and bake 20-25 minutes until edges are golden. Let cool completely before frosting.

3. Now the frosting..in mixing bowl beat together cream cheese and butter until smooth. Slowly add the powdered sugar and continue beating for 1-2 minutes until smooth and creamy.

4. Spread on cooled bars. Sprinkle cinnamon sugar on top for garnish. Cut into squares when ready to serve.
