Maple Cinnamon Roll Cookies

Yield: 3 dozen

Ingredients:
2 cups all-purpose flour
1/4 cup white sugar
1 cup salted butter; chilled and cubed
1/4 cup maple syrup
3 Tbsp chilled water

Filling:
2 Tbsp white sugar
2 Tbsp brown sugar
4 tsp cinnamon

Topping:
1/4 cup maple syrup

Steps:
1. Combine flour and sugar in a medium bowl, mix and add in butter. Mix until dough forms small, pea-sized pellets.
2. Add chilled maple syrup and 2 Tbsp water, and mix until dough can be formed into a ball. DO NOT overmix, or the dough will become tough.
3. Spereate dough into 2 disks. Wrap each disk in plastic wrap and place in refrigerator for 1 hour or until firm.
4. To prepare filling, mix sugars and cinaamon in a small bowl and mix with a fork; set aside. Preheat oven to 350 degrees F.
5. Using a floured surface and rolling pin, roll out dough in the shape of a rectangle 10 inches wide and 15 inches long and about 1/8 inches thick. Sprinkle dough with half of the sugar filling.
6. Starting with the smaller side, roll dough up tightly into a cylinder. Dampen edge with water and seal. Repeat with remaining dough.
7. Using a sharp knife, cut 1/4 inch slices from each roll. Place sliced cookies in an ungreased cookie sheet 1 inch apart from eachother. With a brush, lightly brush tops with maple syrup. Bake for 15 minutes or until golden brown.

Apple Cinnamon Pie Cookies

Ingredients:

1 apple; chopped
1 tsp maple syrup
1 Tbsp brown sugar
1 ½ tsp cinnamon
1 Tbsp butter
1 tsp sugar
1 pie crust dough

Cinnamon Maple Frosting:
4 Tbsp powdered sugar
1 tsp maple syrup
½ tsp cinnamon
½ tsp milk

Whisk all together with a whisk for fork until well combined. Glaze should be slightly thick.

Steps:
1.Preheat oven to 350 degrees F. Cut pie crust into eighths with a sharp knife (they slices should look like pizza slices).

2. In a frying pan, melt butter and add chopped apples. Sautee until apples soften, then add syrup and sugars.

3.Once cooked, place a large spoonful of the apple mix onto pie crust slice and wrap tip of the slice around the rest of the pie crust.

4. Place filled pie crusts on a greased baking sheet and bake for 20-25 minutes.

5. Once cookies are done, let cool for 10 minutes and then with a spoon or fork, frost cookies with the cinnamon maple glaze.

Chocolate Chip Cookie Dough Cupcakes

I love cupcakes and I love anything that is cookie-dough flavored. This is the perfect cupcake if you are like me! To save you some time, you can just use the store bought mini cookies to garnish on top.

 Yield: 24

Ingredients:

1 batch (24 cupcakes) of your favorite yellow cake cupcake recipe
1 batch of your favorite cookie dough recipe (and LEAVE OUT THE EGGS, BAKING SODA, &/OR BAKING POWDER), this is for the “frosting”
1 baked batch of your favorite chocolate chip cookies (for the top of cupcakes)

Steps:
1. Get cookie dough and round into 1 inch balls and then flatten until it is the size of the top of the cupcake.

2. With a sharp knife, cut a 1 inch slit into the cupcakes.

3. Place baked chocolate chip cookies into the slit for decoration.
