Funfetti Cake Batter Bars

Funfetti Cakes are my favorite cakes to bake because of all the SPRINKLES!!! Back in my college days, me and my friends/roommates would make cookies out of cake mix occasionally because it was so easy and took a few minutes to bake..plus they make the best cookies if you have a major sweet tooth like me. I changed up the recipe a bit and made these cookies into bars and added a LOT more sprinkles and chocolate. These are so fun and pretty to eat!

Yield: 12

Ingredients:
1 box of funfetti cake mix
1/2 cup melted butter
2 eggs
1 tsp vanilla extract
1 tsp corn starch
1/2 cup sprinkles
1/2 cup white chocolate chips

Steps:
1. Preheat oven to 350 degrees. In a mixing bowl, mix together cake mix, melted butter, eggs, vanilla extract, corn starch, sprinkles, and white chocolate chips. (Save a few sprinkles and white chocolate chips for the topping!)

2. Lightly grease a 9 x 9 inch baking pan and smooth out cake mixture until even. Top with more sprinkles and white chocolate chips and put in oven and bake for 25-30 minutes. Let cook for 15 minutes after (it will cook a little more during the cooling process!). Cut into bars and enjoy!

Chocolate Chip Cookie Rice Krispy Treats

Well if you couldn’t already tell…I like trying new things when I make rice krispy treats because why not?! Plus, who doesn’t love chocolate chip cookies? Not only are these amazing, these only took me less than 15 minutes to make. So easy anybody could do it. I highly recommend trying new things in the kitchen because that is the best way to come up with new ideas and there is nothing better than perfecting you own idea! 🙂 So have fun with it and enjoy!

Yield: 12

Ingredients:
4 cups rice krispy cereal
2 cups crushed chocolate chip cookies(I used mini cookies because it was easier to crush)
10 oz mini marshmallows
1 Tbsp butter
For the topping
1 cup melted chocolate
1/2 cup crushed chocolate chip cookies

Steps:
1. In a large mixing bowl, combine cereal and cookies. Mix and set aside.

2. In a microwavable safe bowl, melt marshmallows and butter for 1 1/2 minutes. Add to cereal mixture and mix until cereal and cookies are coated evenly.

3. Lightly spray a 9×13 inch baking dish and add mixture and spread evenly with a spatula (spray spatular with nonstick spray to prevent mixture from sticking.

4. Pour melting chocolate on top and spread smoothly until rice krispy treats are completely covered. Sprinkle chocolate chip cookies on top, let set for at least an hour to cool. Then cut, serve, and enjoy!

Cinnamon Roll Cookie Bars

There is nothing better than the smell of cinnamon rolls baking in the oven. Cinnamon Rolls are definitely one of my favorite indulgences, especially for breakfast! When I came across this recipe I thought it was too good and easy to be true.  They  smelled exactly like cinnamon rolls baking in the oven and the only  difference is it took 10 minutes to make, thats it! You really need to try this!

Yield: 18

Ingredients:
Bars
1 box Vanilla Cake Mix
1 box Cook and Serve Vanilla Pudding
3/4 cup butter, melted
1/2 cup light brown sugar
2 eggs
1 Tbsp water
2 Tbsp cinnamon
Frosting
1 (8 oz) block cream cheese, room temperature
1/4 cup butter, room temperature
5 cups powdered sugar
*optional ~ Cinnamon Sugar to garnish
3 Tbsp sugar + 1 tsp cinnamon

Steps:
1. Preheat oven to 350 degrees F. Spray 9×13 baking dish with cooking spray, set aside.
In large bowl combine all ingredients for the bars. Stir until there are no lumps.

2. Spread into prepared baking dish and bake 20-25 minutes until edges are golden. Let cool completely before frosting.

3. Now the frosting..in mixing bowl beat together cream cheese and butter until smooth. Slowly add the powdered sugar and continue beating for 1-2 minutes until smooth and creamy.

4. Spread on cooled bars. Sprinkle cinnamon sugar on top for garnish. Cut into squares when ready to serve.

Birthday Cake Oreo Rice Krispy Treats

Instead of an ordinary birthday cake for a birthday party, try these birthday cake oreo rice krispie treats! I love experimenting in the kitchen and today when I was at the grocery store I just happened to pass by the cookie aisle and these cookies just caught my attention. I love anything that has sprinkles in them..I always have even since I was little and I always will! There’s just something about them that makes anything from ice cream to cookies so much better. Spice up your rice krispies a bit and add in your favorite cookies, I promise you’ll love them! Stay tuned for more flavors.

Yield: 8

Ingredients:
5 cups Rice Krispie Cereal
20 chopped Birthday Cake Oreos
5 cups mini marshmallows
1 tsp butter
3 Tbsp sprinkles
Non-stick cooking spray

Steps:
1. Place cereal and chopped oreos in large mixing bowl.

2. In a large microwavable bowl, microwave marshmallows and butter for 1 minute. Add to large mixing bowl with cereal and Oreos. Stir in melted marshmallow mixture and sprinkles until combined.
Tip***Spray a rubber spatula with cooking spray to prevent marshmallows from being too sticky

3. Spray a 9×13 inch baking pan with non-stick cooking spray and spread the rice krispie treats evenly by pressing down with a spatula. Sprinkle more sprinkles on top and then place in refrigerator for 20 minutes to cool. Carefully cut with sharp knife and enjoy this fun little treat!

Red Velvet Chocolate Cookies

This was my first time making any type of “red velvet” cookies and I am so excited to share the recipe! When I was at the grocery store the other day I couldn’t resist grabbing a bag of the Valentine’s Day pink M&M’s especially since pink is my favorite color.. plus, Valentines Day is just right around the corner.  If you don’t want to use M&M’s you can just use chocolate chips. I used a combo of M&M’s, white chocolate chips, and milk chocolate chips..so its totally up to you!

Yield: 2 dozen

Ingredients:
1/2 cup butter; softened or at room temperature
3/4 cup brown sugar
1/4 cup white sugar
1 egg; room temperature
1 Tbsp heavy cream
2 tsp vanilla extract
1 tsp red food coloring; or around 25 drops of liquid coloring
1 3/4 cups flour
1/4 cup unsweetened cocoa powder
1 tsp baking soda
Pinch of salt
1 cup M&M’s
1/4 cup white chocolate chips
1/4 cup milk chocolate chips
Red Sprinkles (optional)

Steps:
1. In a mixer, beat butter, sugars, and egg until creamed. Slowly add heavy cream, vanilla extract, and food coloring.

2. Reduce mixing speed and add in flour, cocoa, baking soda, and salt until dough is formed. With a wooden spoon or spatula fold in M&M’s and chocolate chips. Cover with plastic wrap and refrigerate for 45 minutes.

3. Preheat oven to 350 degrees F. With a mini ice cream scooper, scoop dough onto cookie sheet lined with parchment paper. *This is completely optional, but I sprinkled red sprinkles and placed 3 M&M’s and a few chocolate chips in cookies dough ball before I baked them. Bake for 11-12 minutes then cool on cooling racks. Cookies will seem a littles under-cooked but they will cook as they cool and they will be extra chewy, just how I like them!
