Breakfast Apple Cookies

Apple cookies are the easiest treats to make! Thanks to Peace Cereal who sent me a few samples of cereals to try and this was one of my creations. It is quick, easy, healthy and the best part; it’s delicious!  (Also, if anyone has any tips or tricks to making peanut butter look pretty when spreading, let me know!)  The most common way to eat cereal is to pour it in a bowl, add milk and eat it with a spoon. This is a great way to get more out of your cereals by using it in different ways. You can find Peace Cereals by HERE. They have tons of healthy breakfast cereals. This cereal in particular has whole rolled wheat, rye, barley & oat mixed with dried dates, raisins, sunflower and flax seeds, almonds & walnuts. It is a great combination of crunchy, chewy and sweet in a bite! It also has plenty of whole grains, fiber & protein in one serving. You can try this with any type of cereal in your pantry, enjoy!

Ingredients

1 Fuji apple; sliced into 1/4 inch slices

2 Tbsp creamy peanut butter

Fruit, Seed & Nut Muesli Cereal by Peace Cereal

Instructions

  1. Spread peanut butter on smoothly on to apple slices.
  2. Sprinkle Fruit, Seed & Nut Muesli Cereal on each slice. Enjoy!

Roasted Garlic Spinach Hummus

This Holiday season has been filled with lots of cookies for me so this healthy treat comes in handy.  I love love  looooove my food processor! Hummus is one of my favorite dips to snack on with crackers or vegetables if I’m really trying to be healthy. I usually always have some stocked in my refrigerator at home. I still ask myself why I continue to buy them when I can easily make it at home!  This recipe came about after I had roasted garlic (it was my first time) and you can find the recipe I used HERE from Simply Recipes.  I wasn’t sure how the garlic would come out. BUT it was amazing just as it smelt like roasting in my oven…Roasting garlic is the easiest things you can make and it’s so versatile. This recipe is a great snack and an excellent way to stay healthy! I also like to drizzle olive oil on the top of my hummus and sprinkle salt and pepper before serving. To store the hummus, cover with plastic wrap and keep in the refrigerator up to 5 days.

Roasted Garlic Spinach Hummus

10 minutes

Yield: About 8

Roasted Garlic Spinach Hummus

This hummus is extra creamy and has an extra health boost with perfectly roasted garlic and fresh spinach!

Ingredients

1 can of garbanzo beans; drained and rinsed

1 cup of spinach; steamed

2 cloves of roasted garlic

2 Tbsp. extra virgin olive oil

the juice of 1 small lemon

Salt and Pepper to taste

Instructions

  1. Combine garbanzo beans, spinach, roasted garlic olive oil, lemon juice, and salt and pepper. Pulse in the food processor until smooth; about 3 minutes. Stir every 30 seconds to ensure smoothness and creaminess. Add more olive oil if necessary to get the consistency you desire. Serve and enjoy this delicious healthy snack!

This can last up to 5 days in the refrigerator.

Strawberry Chocolate Chip Oatmeal

Mornings can be tough, especially when you are in a rush…so these make-ahead oats come in handy because you can prep them the night before to ensure a healthy breakfast the next morning. I never understand when people say “I don’t have time for breakfast”. We all have time for breakfast, you just need to make the time… These oats are gluten-free, dairy-free, and just about sugar free. What a perfect way to start the day!  They literally only take about 10 minutes to whip up, so get cooking in the kitchen!

Strawberry Chocolate Chip Oatmeal

Strawberry Chocolate Chip Oatmeal

Chocolatey and sweet, without the guilt! Every bite is bursting with fresh strawberries.

Ingredients

1 cup of almond milk; unsweetened

1/2 cup old fashioned oatmeal

1/2 tsp cinnamon

1 Tbsp honey

1/2 cup fresh strawberries; chopped

2 Tbsp mini dark chocolate chips

Instructions

  1. In a small to medium sized sauce-pan, bring almond milk to a light boil.
  2. Add in the oats, honey, and cinnamon and mix until oats are fully cooked...about 5-8 minutes.
  3. Once oats are cooked, mix in chopped strawberries and top with mini chocolate chips. Enjoy! 🙂

Spinach and Swiss Cheese Breakfast Bowl

I love a good hearty breakfast to get me through the day. And you know what they say, breakfast is the most important meal of the day so why not make it delicious and healthy!? This breakfast bowl is filled and layered with wilted spinach, scrambled eggs, melted swiss cheese, and salsa. I also love sliced avocado in it too..You can add your favorite breakfast toppings to this! Stay tuned for more hearty breakfast bowls coming soon! 🙂

Ingredients:
My scrambled eggs recipe
2 cups fresh spinach
1/2 tsp olive oil
1 slice of swiss cheese
1 Tbsp salsa
Avocado (optional)

Steps:
1. Sauté spinach: In a sauté pan on medium heat add a drop of olive oil and then add the spinach. It’s ok to pile it up as it will wilt quickly. It may not all fit in at first. Using a tongs, gently toss and turn the spinach so all of the unwilted leaves make contact with the bottom of the pan. Continue to do so for a few minutes until spinach is cooked down slightly.

2. In a bowl, add spinach to bottom of bowl, then top with a generous scoop of scrambled eggs, swiss cheese, and salsa.
