Pumpkin Spice Waffles with a Cinnamon Maple Syrup

Yield: 5

Ingredients:

1 ½ cups of all-pupose flour
½ cup whole wheat flour
3 Tbsp of firmly packed dark brown sugar
2 tsp of baking powder
1 tsp of baking soda
½ tsp of cinnamon
½ tsp pumpkin pie spice
pinch of salt
1 1/2 cups of milk
1 cup of canned 100% pure pumpkin
1 egg yolk plus 3 egg whites
4 tablespoons of melted cooled butter

Steps:
1. Mix flours, sugar, baking powder, baking soda, cinnamon, pumpkin pie spice, and salt in a large bowl and mix until combined.

2. Heat waffle iron. Add milk, pumpkin, eggs, and cooled butter to flour mixutes and mix on medium speed until smooth.

3. Waffle mix should be the consistency of a brownie batter. When waffle iron is ready, butter and add about a cup and cook accordingly to your waffle iron (it should be around 3 minutes per waffle).

Cinnamon Maple Syrup Glaze

Ingredients:

¾ cup maple syrup
2 Tbsp powdered sugar
1 Tbsp butter
1 tsp cinnamon

Steps:
1. In a microwave safe cup or small bowl, add all ingredients and microwave for 30 seconds. Stir and put back in microwave for another 15 seconds. The syrup glaze should be thick once cooled.

Apple Cinnamon Pie Cookies

Yield: 8

Ingredients:

1 apple; chopped
1 tsp maple syrup
1 Tbsp brown sugar
1 ½ tsp cinnamon
1 Tbsp butter
1 tsp sugar
1 pie crust dough

Cinnamon Maple Frosting:
4 Tbsp powdered sugar
1 tsp maple syrup
½ tsp cinnamon
½ tsp milk

Whisk all together with a whisk for fork until well combined. Glaze should be slightly thick.

Steps:
1.Preheat oven to 350 degrees F. Cut pie crust into eighths with a sharp knife (they slices should look like pizza slices).

2. In a frying pan, melt butter and add chopped apples. Sautee until apples soften, then add syrup and sugars.

3.Once cooked, place a large spoonful of the apple mix onto pie crust slice and wrap tip of the slice around the rest of the pie crust.

4. Place filled pie crusts on a greased baking sheet and bake for 20-25 minutes.

5. Once cookies are done, let cool for 10 minutes and then with a spoon or fork, frost cookies with the cinnamon maple glaze.
