Almond Crusted Baked Eggplant Chips

I love this recipe because it is so unique. The eggplant and almonds good really well together and who knew they would make a great combination. The almonds give this an extra crunch and I like mine extra crispy because it makes it easier for dipping! This recipe is also healthy it makes the perfect snack or dinner side if you are trying to eat clean.

Yield: 6

Ingredients:
3 medium sized chinese eggplants, sliced
1/4 cup olive oil
1 tbsp toasted sesame oil
1 tbsp apple cider vinegar
1 tbsp lemon juice
1 cup ground almonds
2 tsp garlic powder
1 tsp onion powder
1/2 tsp black pepper
1 tsp salt
To dip:
3/4 cup marinara sauce
1/4 cup pesto

Steps:
1. Preheat oven to 425 degrees F. In a small bowl, whisk together olive oil, apple cider vinegar, and lemon juice until combined.

2. In another bowl, mix the almond flour, garlic powder, onion powder, black pepper, and salt until combined.

3. Slice eggplant slices to about 1/4 inch thick and dip into the oil mixture, tapping off excess oil.
Coat in the almond flour mixture and set on a greased baking sheet.
*Spray slices with olive oil to make it extra crispy.

4. Bake for 15 minutes, flip slices, then bake for another 15 minutes. I like to serve my chips with a side of marinara and pesto sauce but its completely up to you!

Easy and Light Crab & Shrimp Cocktail

There is really no right or wrong way to make these Mexican styled cocktails. I am a huge fan of them especially when I am wanting to eat something cool and light in the summer time. I love tomato juice (weird I know)..but Clamato juice is better for this recipe in my opinion. The longer it sits in the fridge, the better so everything can absorb together.  You can add more or less of any ingredients and it will still be delicious! So if you like it spicy, add hot sauce! Oh, and this is also another healthy dish that you don’t have to feel guilty for 🙂

Yield: 4

Ingredients:
1 pound of cooked shrimp; cut in half
1/2 pound imitation crab meat; coarsely chopped
1 cucumber; seeds removed and cubed
1 1/2 cups Clamato Juice
1/4 cup cilantro; chopped
1 green onion; chopped
2 Tbsp ketchup
1 Tbsp hot salsa
1 avocado; cubed
1/2 tsp salt
1/2 tsp black pepper
1 whole lime
1/2 lemon

Steps:
1. Throw everything in a large bowl…squeeze in the lime and half of the lemon and mix! EASY. Let sit in refrigerator for a few hours or until chilled. I love dunking tortilla chips in this as well when I’m feeling extra hungry.

Chocolate Chip Cookie Rice Krispy Treats

Well if you couldn’t already tell…I like trying new things when I make rice krispy treats because why not?! Plus, who doesn’t love chocolate chip cookies? Not only are these amazing, these only took me less than 15 minutes to make. So easy anybody could do it. I highly recommend trying new things in the kitchen because that is the best way to come up with new ideas and there is nothing better than perfecting you own idea! 🙂 So have fun with it and enjoy!

Yield: 12

Ingredients:
4 cups rice krispy cereal
2 cups crushed chocolate chip cookies(I used mini cookies because it was easier to crush)
10 oz mini marshmallows
1 Tbsp butter
For the topping
1 cup melted chocolate
1/2 cup crushed chocolate chip cookies

Steps:
1. In a large mixing bowl, combine cereal and cookies. Mix and set aside.

2. In a microwavable safe bowl, melt marshmallows and butter for 1 1/2 minutes. Add to cereal mixture and mix until cereal and cookies are coated evenly.

3. Lightly spray a 9×13 inch baking dish and add mixture and spread evenly with a spatula (spray spatular with nonstick spray to prevent mixture from sticking.

4. Pour melting chocolate on top and spread smoothly until rice krispy treats are completely covered. Sprinkle chocolate chip cookies on top, let set for at least an hour to cool. Then cut, serve, and enjoy!

Grilled Guacamole

I can’t believe yesterday was my first time coming up with the idea to grill my avocados before making guacamole. It added a smokey flavor to the dip and this is a great snack/appetizer to make for any occasion, especially on a football game day!

Yield: 8

Ingredients:
4 avocados
1 Tbsp olive oil (for the grill)
1/4 cup red onions
1 lime
1 tsp salt
1/2 tsp pepper
1/4 cup cilantro (optional)
1/4 cup tomatoes (optional)

Steps:
1. Heat grill on medium heat. Cut avocados in half and take pits out. Sprinkle salt, pepper, and the juice of half of a lime. Place avocados faced down on grill and let sit for 5 minutes, or until you could see grill marks.

2. In a small bowl, spoon out avocados, squeeze the juice of the other half of the lime, onions, cilantro, salt and pepper. Smash together with a fork until slightly chunky. Serve with tortilla chips, amazing!
