Chocolate Chia Berry Protein Smoothie

What better way to start your morning by drinking this antioxidant packed smoothie! This morning after my workout I wasn’t all that hungry and wanted something to drink like a Jamba Juice. Instead, I looked in my fridge and saw all kinds of fruit to make a smoothie and for protein I just added a scoop of protein powder. It was delicious and the combination of the berries and chocolate tasted like a dessert..too good to be healthy, but it is 🙂

Yield: 1

Ingredients:
1 cup blueberries
1/2 banana; sliced
1/2 cup fresh spinach
1 Tbsp chia seeds
1/3 cup vanilla almond milk; unsweetened
4 ice cubes
1 scoop of chocolate protein powder

Steps:
1. Blend all ingredients until combined and enjoy!

Brownwood Acres Foods Inc

I recently received a package so generously from Brownwood Acres Foods Inc. The package was full of some of their FruitFast healthy pomegranate goodies including; Pomegranate Juice Concentrate, Pomegranate Softgels, and Pomegranate Fruit Supplement Bar. All of their products are 100% all natural, pure, and come from  California’s San Joaquin Valley.
As we are aware of, pomegranates are one of the worlds super foods so it is essential that we include them in our daily diets. Brownwood Acres doesn’t add any sugar, fillers, & preservatives to their products and they also carry flavors of Pomegranate, Blueberry, Red Raspberry, Tart Cherry, Concord Grape, and Cranberry. So as you can already see, they have flavors for everyone’s preference!
I added a splash of the pomegranate juice to a glass of sparkling water and it was delicious, perfectly tart and refreshing. The softgels come in handy on days when I know I won’t be able to get the nutritional resource of antioxidants. Thanks to Brownwood Acres, I luckily just have to simply take the softgel and it is equivalent to one days worth of antioxidants. How perfect is that?! Or, if you are like me and have somewhat of a sweet tooth occasionally….or everyday the fruit supplement bars are outstanding. I had one yesterday on my drive back home and they brought me back to the days of when I would eat fruit snacks, except of course these bars are healthier, all natural, and the only ingredient in it is pomegranates and nothing else.

Blueberry Oatmeal Pancakes

I haven’t been to the grocery store in almost 2 weeks so I was running a little low on breakfast options this morning when I opened my refrigerator..One of my favorite fruits to eat almost every day are blueberries, so of course I had a pack of them, and only 1 egg so the first thing I thought was pancakes! I used whole wheat flour but if you prefer white flour you could use that instead. If you’re like me and like breakfast for dinner, this works out perfectly!

Yield: 2-4

Ingredients:
1/4 cup whole wheat flour
1/4 cup oatmeal
1 Tbsp honey
1 Tbsp brown sugar
1 Tbsp baking powder
1/2 cup almond milk
1 egg; beaten
Pinch of salt
1 tsp cinnamon
1 Tbsp baking oil; such as vegetable oil or coconut oil
3/4 cup fresh blueberries
Maple syrup (optional)

Steps:
1. Heat a large frying pan or griddle on medium heat (I prefer using a large pan/griddle so it becomes easier to flip!).

2. In a large bowl, whisk flour, oats, honey, brown sugar, baking powder, almond milk, egg, salt, cinnamon, and oil. Whisk until well combined and until batter becomes smooth. With a spatula, fold in only a half a cup of berries. Pour batter onto lightly greased pan/griddle. Cook for 1-2 minutes or until bubbly. Flip pancakes, and continue cooking for another minutes of two. Top with honey and/or syrup and sprinkle with remaining berries. That’s it…Delicious and nutritious!

Fruit Salad with Citrus Honey Mint dressing

I love fruit especially with this dressing. It is best served cold because the mint and citrus flavors make it so refreshing. You can use any fruit that you like, the possibilities are completely endless! You can eat this for a healthy breakfast, a snack, or even side dish!

Yield: 6

Ingredients:
1 cup fresh blueberries
1 cup fresh pineapple
1 cup fresh cantaloupe
1 cup fresh strawberries
2 Tbsp honey
1/2 of a small lemon
1/2 of a small lime
3 Tbsp fresh mint; coarsely chopped

Steps:
1. In a small bowl, combine honey, the juice of half of the lime and lemon. Place in microwave to melt for 15 seconds and whisk with a fork. Place fruit in large serving bowl and drizzle dressing. Add mint and mix in with fork until fruit is evenly coated.

Blueberry Oatmeal Cups

Yield: 12

Ingredients:
2 cups old fashioned oats
1/4 cup brown sugar
1 Tbsp honey
2 egg whites
1 1/2 tsp baking powder
1 tsp cinnamon
1/4 tsp salt
1 1/2 cup fresh blueberries
1 medium banana or 1/2 large banana; mashed
1/2 cup reduced fat milk (I use almond milk, vanilla flavor)
1/2 tsp vanilla extract

Steps:
1. Preheat oven to 350 degrees F. Lined a cupcake pan with muffin papers. In a medium bowl, combine oats, sugar, baking powder, cinnamon, and salt. Whisk and set aside.

2. In a separate medium bowl, combine the wet ingredients; honey, egg whites, milk, mashed banana and vanilla. Mix well with a whisk or mixer. Once combined, add wet mixture to dry mix and gently mix until combined. With a spatula, fold in blueberries.

3. With an icecream scoop or a large teaspoon, divide mixture evenly between cupcake cavities. Bake for 20-25 minutes or until golden brown. Let cool for 10 minutes and the enjoy!

*****You can also use my favorite type of baking tray, silicone shaped trays!! You just lightly grease them and the muffins will pop right out when the are cool. I bought mine in the Target dollar section:)
