Breakfast Yogurt Granola Cups

I received samples of Sweet Home Farm Granola and I wasn’t sure what to do with it at first. I love granola and all of the ways you can incorporate it in my recipes! I love yogurt with berries and granola in the morning for breakfast which led me into this creation. I am guilty of occasionally having ice cream for dessert..well, once I made this I wasn’t wanting my ice cream anymore. This is a healthier alternative and you don’t have to feel guilty for splurging on this tasty frozen treat!

Sugar Cookie Fruit Tart

image
If you’re looking for a something extremely quick and easy to make, this is it! You can use any fruit (I would recommend using what’s in season for the best and sweetest taste). I just love this dessert so much and I know you will too!

Ingredients:
Sugar Cookie dough (I used Pillsbury)
1 package of French Vanilla instant pudding
Fresh berries (I used strawberries, blueberries, and raspberries)

Steps:
1. Preheat oven to 350 degrees F. Roll out dough, or press with your hands into a 9×13 inch baking dish. Bake for 15-20 minutes, then let cookie cool completely.

2. In the meantime, make instant pudding by following directions on box. Once cookie is cooled, place on serving dish and spread pudding to your liking. Then..time to fix it up with berries! Place berries on tart anyway that you want:) Delicious, easy, quick, and you can really serve it any way you like.

Peanut Butter Oatmeal Waffles

image

Weekend mornings just seems like the most perfect time to make waffles for breakfast. My Dad bought me a waffle iron  2 years ago and I feel like I don’t use it as much as I should so I have yet to try new waffle recipes.  Waffles are super easy to make and take nearly 10 minutes to whip up. The peanut butter and oatmeal in these waffles give them a nutty sweet taste that you have to try!

Yield:4

Ingredients:
2 cups of your favorite waffle mix (I used Krusteaz)
1 cup water
1/2 cup milk
2 Tbsp melted butter
1/4 cup melted peanut butter
1/4 cup oatmeal
Cooking spray

Steps:
1. Heat a waffle iron. In a large mixing bowl, whisk together all the ingredients until combined (it will look slightly lumpy). Spray waffle iron and scoop in waffle mixture with a large spoon. Close waffle iron and let cook for 3 minutes…repeat until you have used all of waffle mixture. Top with warm maple syrup and your favorite fruit.
