Chocolate Chip Banana Nut Bread

The first thing that always comes to mind when I see banana’s turn ripe is banana bread of course! I experimented with almond flour because my Dad gave me a gallon size zip lock of it and I didn’t know what to do with it. Almond flour is gluten-free so it can be a little tricky when using it in recipes because it does not react the way regular flour does. It tends to bake in a more dense form and doesn’t rise much. It is great in banana bread because you can’t tell the difference and banana bread is usually a bit dense and moist.

Ingredients

3 large ripe bananas; mashed

2 eggs

2 tsp. vanilla extract

3 Tbsp. maple syrup

2 cups almond flour

1 Tbsp. baking powder

2 tsp. ground cinnamon

1 Tbsp. baking powder

¼ cup walnuts; chopped

½ cup chocolate chips

For the glaze:

1 Tbsp. melted butter

1 Tbsp. almond milk

3-6 Tbsp. Powdered sugar

Instructions

  1. Preheat oven to 350 degrees F. Lightly spray a loaf pan and set aside.
  2. Combine mashed bananas, eggs, vanilla extract and syrup. Mix together until combined. Then mix in almond flour, baking powder, cinnamon, baking powder, walnuts and chocolate chips. Mix until all ingredients are combined.
  3. Pour banana bread mixture into loaf pan, use a spatula to scrape all of the batter from the bowl. Bake for 30-35 minutes until toothpick comes out clean from the center.
  4. For the glaze, melt butter in a microwavable mug. Whisk in almond milk and powdered sugar. The glaze will thicken depending on how much powdered sugar you add. If it gets too thick, add more almond milk. The glaze will thicken and thin quickly. Once banana bread is cooled, drizzle glaze on top. Let is set for about 15 minutes, slice bread then enjoy!

Banana Almond Protein Bars

We all love treats so these come in handy so perfectly! The make a great grab-n-go snack or breakfast. Also, I love the additional protein and fiber that comes from Silk Almond Milk Protein and Fiber plus.

Yield: 16-20 servings

Ingredients:
5 Tbsp butter; softened
1/2 cup honey
1/2 cup brown sugar
2 tsp vanilla
1 egg
2 egg whites
1 1/2 cup mashed bananas (about 2 large bananas)
1 3/4 cup whole wheat flour
1 tsp baking soda
1/4 tsp salt
1/2 tsp baking powder
1/2 cup Silk almond milk protein & fiber plus, origanal or vanilla flavor
1/2 cup chopped almonds
1/2 cup chocolate chips..or a little more 🙂

Steps:
1. Preheat oven to 350 degrees F. In a large mixing bowl cream together butter, honey, and brown sugar. Once butter is creamed with honey and sugar, slowly add in vanilla, egg, and egg whites.

2. In a small seperate bowl, mash together bananas with a fork until well mashed. Add bananas to batter mix until combined. Whisk in flour, baking soda, salt, baking powder, 1/4 cup almonds, 1/4 cup chocolate chips, and almond milk until batter becomes smooth (batter will be a bit thick).

3. Grease a 9×13 inch baking dish with cooking spray or butter. Pour mixture in baking dish and smooth out with spatula until batter is completely even. Sprinkle with leftover chopped almonds and chooclate chips..I added a little more ;). Bake for 20-25 minutes or until top is golden brown. Let cool for 15 minutes and then cut into squares. Let cool on cooling rack for best results. Enojoy!

Cinnamon Streusel Almond Banana Muffins

I love buying too many bananas sometimes because I know I will have a good excuse to make treats like these muffins. These little muffins will melt in your mouth..the cinnamon streusel topping really puts these little guys into a different category. The cream cheese adds an extra rich and creamy texture that makes them extra moist. You will have to try one to know what I’m talking about!

Yield: 2 dozen (24 muffins)

Ingredients:
3/4 cup butter; softened
8 oz. cream cheese; softened
1/2 cup white sugar
1 cup brown sugar
1/2 cup honey
2 large eggs; at room temperature
3 cups all-purpose flour
2 tsp cinnamon
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
3 medium mashed bananas (make sure they are ripe)
1/2 cup chopped roasted almonds
1 tsp vanilla extract

For the streusel topping:
1/4 cup butter; softened
1/4 cup brown sugar
1 tsp cinnamon
3/4 cup oatmeal

Steps:
1. Preheat oven to 350 degrees F. In a mixing bowl, beat butter and cream cheese on medium speed until creamy. Gradually add in sugars and honey beating until light and fluffy.

2. Add in eggs (1 at a time) and blend until combined. Add in flour, cinnamon, baking powder, baking soda, and salt and mix until blended. Stir in mashed bananas, almonds, and vanilla.

3. For the crumble streusel topping..in a medium bowl, add butter, brown sugar, cinnamon, and oatmeal. Mix with a fork until its crumbly.

4. Heavily grease muffin pans and scoop muffin mix into pans about 3/4 of the way full. Top muffins with streusel crumble and bake for 25-30 minutes or insert tooth pick until center comes out clean. Let muffins cool for 10 minutes and enjoy! These also make a great morning snack or breakfast.

Chocolate Chia Berry Protein Smoothie

What better way to start your morning by drinking this antioxidant packed smoothie! This morning after my workout I wasn’t all that hungry and wanted something to drink like a Jamba Juice. Instead, I looked in my fridge and saw all kinds of fruit to make a smoothie and for protein I just added a scoop of protein powder. It was delicious and the combination of the berries and chocolate tasted like a dessert..too good to be healthy, but it is 🙂

Yield: 1

Ingredients:
1 cup blueberries
1/2 banana; sliced
1/2 cup fresh spinach
1 Tbsp chia seeds
1/3 cup vanilla almond milk; unsweetened
4 ice cubes
1 scoop of chocolate protein powder

Steps:
1. Blend all ingredients until combined and enjoy!

Banana Nut Bread Oatmeal

Love banana nut bread? Try this healthy spin on an oatmeal!

Yield: 1-2 (depends on how hungry you are!)

Ingredients:
1 cup milk or almond milk (unsweetened, vanilla flavored)
1/2 cup oats
1 tsp vanilla extract
1 tsp cinnamon
1 tsp brown sugar
1 Tbsp honey
1 Tbsp roasted walnuts
1 banana

Steps:
1. In a medium saucepan, add milk, oats, vanilla, cinnamon, brown sugar, and honey. Let simmer and stir constantly on medium heat for about 7 minutes. Then add in 1 tsp of walnuts and half of banana (you can slice or chop it). Continue stiring for another minute or 2 until oatmeal thickens. Top with rest of walnuts, sliced banana, drizzle of honey, and a dash of cinnamon. Done! Healthy and tastes just like banana nut bread!
