Healthy Valentine’s Day Trail Mix

Surprise your sweet Valentine with this healthy treat! I was at Target aka one of my favorite stores and I couldn’t help but go down the Valentine’s Day aisle. As usual, Target had so many cute things! I wanted to make my boyfriend something this weekend and instead of baking a sweet dessert (like heart shaped Valentines Day cookies that I really wanted to make), I made this healthy trail mix! It’s perfect for any any-time snack, breakfast or a sweet treat. There is a ton of crunchy, chewy and sweet in this mix!

Ingredients

2 cups of Kashi® Warm Cinnamon Oat cereal

1 cup of raw almonds

1 cup of strawberry or plain yogurt covered raisins

1/2 cup less sugar dried cranberries

1 cup freeze dried raspberries

1/2 cup dark chocolate chips

1 cup of Natures Path® Mixed Berries Granola Bites

  1. Mix all ingredients in a large bowl and enjoy with love!

Roasted Rosemary and Garlic Almonds

Almonds make the perfect healthy snack and they are great on the go! Naturally the easiest way to snack on almonds is to eat them raw/natural. The key to roasting your own almonds is to never underestimate the baking time. This has happened to me more than once and it’s always so disappointing when you burn a batch..SO don’t let this happen to you. Once the timer goes off, take them out of the oven even if they don’t look roasted. They will continue to cook as they cool. These are savory in flavor and you don’t have to feel guilty since these are loaded with protein, fiber, healthy fats, and other nutrients. Enjoy!

Roasted Rosemary and Garlic Almonds

Ingredients

2 cups of whole (natural) almonds

2 Tbsp extra virgin olive oil

3/4 tsp sea salt

1/2 tsp granulated garlic

1 Tbsp finely chopped rosemary

Instructions

  1. Preheat oven to 300 degrees F.
  2. Combine all of the ingredients in a bowl and toss to coat all almonds. Arrange on baking sheet lined with foil. Bake for 20 minutes or until lightly toasted. Let almonds cool to room temperature.

The say a fruit smoothie a day, keeps the doctors away. This sweet smoothie is loaded with antioxidants….and what better way to get your morning started then this! Blueberries are a super food that not only contains antioxidants, but it also contains a great amount of minerals like potassium, manganese, copper, iron and zinc. All of these nutrients are important to our bodies so be sure to load up on them!

Delicious and most importantly..so nutritious! This is a healthy version of a blueberry muffin that will fill you with antioxidant goodness!

Ingredients

1 cup frozen blueberries

1/2 cup vanilla greek yogurt

1/3 cup almond milk

1 Tbsp chia seeds

1/2 tsp almond extract

1/2 banana; sliced

1 tsp honey

  1. All you need to do is simply blend all of these ingredients in a blender and top with additional blueberries (optional)!

Who said nachos can’t be healthy for you? Well you can feel great about eating these highly nutritious nachos for breakfast or even a snack! One of my old favorite college snacks was apples and peanut butter–so I recreated this snack into something a bit more fun..

Sweet and crunchy apple slices have a fun new twist with a comination of chocolate, peanut butter, coconut, and almonds!

Ingredients

1 large apple; sliced

1 Tbsp peanut butter; melted

2 Tbsp cup dark chocolate chips

2 Tbsp silvered almonds

1 Tbsp coconut flakes

1 Tbsp honey (optional, if you want them to be extra sweet)

Instructions

  1. Place apple slices on a plate. Drizzle the peanut butter, chocolate chips, almonds, coconut flakes, and honey (optional) on apples. Super easy, fun, and nutritious!

I love blueberry muffins. It’s healthy since it has blueberries in it right? We can pretend 🙂 This is like a giant muffin that comes with extra goodies! You can serve this as a breakfast treat or a dessert! The cake is light fluffy, and you will get fresh blueberries in every  bite!

Blueberry Almond Muffin Cake

​This is just like a delicious moist blueberry muffin, except this is a cake with a hint of almonds! The glaze gives this cake an extra cakeyyy texture with a crunchy sugar almond topping.

Ingredients

1 cup unsalted butter; salted (2 sticks)

2 cups sugar

3 large eggs

1 Tbsp almond extract

2 3/4 cup all-purpose flour

2 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1 1/4 cup whole milk

Zest from 1 lemon

Juice from 1 lemon

1 lb of fresh blueberries

Frosted Glaze:

1 1/2 cup powdered sugar

3 Tbsp milk

1/2 tsp almond extract|

Cake Topping:

1/4-1/2 cup sliced almonds

2 Tbsp sugar|

Instructions

  1. Preheat oven to 325 degrees F. In a mixing bowl, cream together the butter and sugar until fluffy. Beat in the eggs and vanilla until combined.
  2. Slowly add in the flour, baking powder, baking soda, and salt to the wet mixute. Mix until everything is incorporated...Slowly add in the milk and beat mixture until it is smooth. Fold in the lemon zest, juice, and 1/2 of the blueberries.
  3. Pour the batter into a greasted bundt pan. Sprinkle the remaining blueberries on top (they will sink and make it look pretty, once cake is baked). Bake for 60-80 minutes or until top of cake is golden brown. You can also insert a toothpick to check to see if it is completely baked. Once cake is baked, wait 20-30 minutes before flipping over and transferring to a cooling rack.
  4. In the meantime while you are waiting for your cake to cool, you can make this simple light glaze. In a medium sized bowl, whisk together powdered sugar, milk, and almond extract. Whisk together until it is smooth and there are NO lumps. Once the cake is cooled, drizzle all of the glaze with a spoon. Immediately after, sprinkle cake with almonds and sugar. Enjoy!
