If you love Muddy Buddy Treats like me, then you will love this sweet snack/dessert! This fun recipe is perfect for Easter and everyone will be sure to enjoy it. This mix is filled with Easter Cadbury chocolate eggs because what would Easter be without them? Plus, it’s another great excuse to buy candy..at least for me! This mix is addicting so enjoy it while they last 🙂

Easter Bunny Mix

Ingredients

6 cups Rice Chex Cereal

2 cups White Chocolate Melts

1 1/2 cup. shredded coconut

2 cups Mini Cadbury Eggs

1 cup marshmallows

Red food coloring (optional)

Instructions

  1. Place Chex cereal in a large bowl and set aside.
  2. In a microwave proof bowl, melt white chocolate melts in the microwave and stir until smooth.
  3. Pour white chocolate over cereal and gently fold until coated. (If you want to make half of your mixture pink, save half of the melted chocolate and add about 3 drops of food coloring. Mix until light pink, then mix in cereal).
  4. Put one cup of the shredded coconut in a large plastic bag and pour the chocolate coated cereal in, then add the other cup of shredded coconut. Shake bag until coated in coconut
  5. Pour out onto foil or a cookie sheet and let cool.
  6. Add Mini Cadbury Eggs and marshmallows and serve!

6 Ingredient–Breakfast in a Bell Pepper

This easy recipe is great because you can make them at the beginning of the week and they will last all week long.  I try to implement ways to eat healthy all week long (well at least most of the week)–and this is an awesome way to start your mornings off to a healthy start! It is essential to plan ahead even though it can be time consuming at times. Luckily, this recipe only takes about 10 minutes to prepare {total} and that’s it. So really, do yourself a favor a make these nutrient packed peppers! All you have to do in the morning is pop them in the microwave for 30 seconds and take them to go. Easy-peasy!

Breakfast in a Bell Pepper

Ingredients

3 bell peppers, halved and seeded

6 whole eggs

2 tbsp chopped green onion

2 cups fresh baby spinach, chopped

1 cup shredded cheese; divided

1 zucchini; chopped

1/2 tsp lemon pepper

1/2 tsp garlic powder

Instructions

  1. Preheat oven to 350 degrees F.
  2. In a medium bowl, combine eggs, green onions, spinach, ½ cup cheese and zucchini with a whisk until combined.
  3. Lay the peppers in a lightly greased baking dish (whatever size works best for you--make sure they are a litle snug in the baking dish so they don't move too much and spill).
  4. Divide your egg mixture between your peppers and sprinkle with remaining cheese. Cover with tin foil and bake for 45-50 minutes, or until eggs are set.

Taco Lettuce Wraps

I can eat tacos just about any night of the week..however that can’t happen but these definitely can suffice my taco cravings! They are also very simple and easy to make.

Serving Size: 8-10

Taco Lettuce Wraps

Taco Tuesday's just got better with these!

Ingredients

1 lb of ground turkey meat (or ground beef)

Olive oil; a drizzle

1/4 cup white onions; chopped

Homemade Taco Seasoning:

2 tsp hot chili powder

1 1/2 tsp paprika

1 tsp onion powder

1/2 tsp sea salt

1/2 tsp garlic powder

1/2 tsp ground cumin

1/4 tsp freshly ground black pepper

1 pinch cayenne pepper (optional)

1 pinch red pepper flakes (optional)

8 romaine lettuce leafs

You favorite toppings (I used cheese avocado, and cherry tomatoes)

Instructions

  1. Heat a frying pan to medium heat. Drizzle olive oil and add chopped onions. Sautee for 3 minutes until light brown. Add in ground turkey and all of the seasonings. Stir constantly until the meat is fully cooked (about 10 minutes).
  2. Once cooked and cooled, spoon in taco meat into lettuce leafs. Top with your favorite toppings (guacamole, salsa, sour cream, pico de gallo, cheese)
