Cheesy Baked Cauliflower Tots

This is definitely one of my new favorite side dishes! These delicious little bits of what you would think is a tater tot but its really cauliflower will blow your mind completely. These are really easy to make even on a weeknight when you are rushed for time.I had extra tomato sauce from the weekend so I dipped my tots in it and it went perfectly. They are also perfectly delicious by themselves as well. Really though–you won’t believe how good these are until you try them!

Yield: About 2 dozen (24)

1 head of cauliflower
2 cloves garlic
1/4 yellow onion
1 tsp salt
1 tsp garlic powder
1 tsp black pepper
1 cup of shredded cheddar cheese
1/2 cup parmesan cheese
1 egg
1 Tbsp flour
1 Tbsp Italian seasoned breadcrumbs
1 cup marinara sauce for dipping (optional)

1. Preheat oven to 400 degrees F. Wash one head of cauliflower and chop until it crumbles. Place in microwavable safe bowl and microwave for 2 minutes, until soft.

2. In a large food processor, blend together, cauliflower, garlic, onions, salt, garlic powder, and pepper until its is well combined together. Add cauliflower mixture to a large bowl and mix in cheeses, egg, flour, and breadcrumbs until combined.

3. Spread cupcake tins with cooking spray and spoon in cauliflower mixture evenly (about 1/2 inch thick) sprinkle with more parmesan and bake for 15-20 minutes until crispy looking. Let cool for 10 minutes and enjoy!

*If you want to make smaller tots, use mini cupcake tins.

Perfect M&M Pudding Cookies


Easter is right around the corner so making these cookies was only necessary. Who knew that by adding a few tablespoons of pudding mix would make these cookies out of this world! I also made these in about 10 minutes and so can you. You can make these all season long by adding different M&M’s. Of course I went with the spring edition this time. I love how these cookies make the perfect cookie shape after you bake them. Did I mention they also go perfect with a tall glass of milk?!

1 stick (1/2 cup) unsalted butter; softened
1/2 cup granulated sugar
1/2 cup packed light brown sugar
1 large egg
1/2 teaspoon pure vanilla extract
1-1/2 cups all purpose flour
3 tablespoons Instant vanilla pudding mix
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup chocolate chips
1 or 1-1/2 cups M&M’s(I used the Spring edition!)

1. Preheat oven to 350 degrees F and line a large baking sheet with a silpat liner or parchment paper.

2. In a large mixing bowl cream your butter and sugars until well combined. Add your egg and vanilla mixing to combine. Add your flour, pudding mix, baking soda and salt. Mix until well combined. Fold in chocolate chips and M&M’s.


3. With a mini ice-cream scooper, place dough 1 inch apart from each other. Bake for 10-12 minutes until cooked through and golden brown. Let cool for 10 minutes once done and enjoy!


Easter Peeps Rice Krispy Treats


Rice krispy treats are so easy to make and take almost no time at all! Everyone loves peeps especially during the spring time so what a cute and fun way to add a festive Easter twist!

Yield: 20

6 cups of rice cereal
5 cups of mini marshmallows
1 Tbsp butter
1/2 cup sprinkles
1/4 cup white chocolate
20 marshmallow peeps

1. In a large bowl add cereal and set aside. In a microwavable safe bowl melt together the marshmallows and butter until slightly melted, usually about 1 1/2 minutes. Pour marshmallow mixture into large bowl and stir with a spatula until combined.

2. Add in sprinkles until they are mixed in evenly. Then lightly***grease baking sheet with cooking spray and pour rice krispys into pan pressing down with a spatula to make it even.

3. Melt white chocolate and with a butter knife or teaspoon, dab about 1/2 tsp of white chocolate onto each peeps and place on top of rice krispy treats.

*You can place the peeps any way you like on treats. I like and recommend placing them about an inch apart from each other so when you cut them, each rice krispy square will have a peeps. SO cute 🙂


Baked Philly Cheesesteak Potato Skins


I’m not one to order philly-cheesesteak sandwiches but for some reason these sounded amazing! I love baked potatoes and whats not to love with a nice piece of meat! If you wanted to keep the inside of the potato, add it to the steak mixture and you’ll have twice baked potatoes. Calories don’t count on this one 😉

Yield: 4

2 Idaho Potatoes
1/4 cup sour cream (I used fat-free)
1/2 tsp salt
1/2 tsp pepper
1 tsp olive oil
1 yellow onion; chopped
1 clove of garlic; chopped
1 green or red pepper; sliced
8 ounces of boneless rib-eye steak; thinly cut into strips
8 slices of provolone cheese
2 green onions
1 Tbsp Worcestershire sauce

1. Preheat an oven to 350 degrees F. Poke washed potatoes with a fork and place in oven to bake for 1 hour.

2. Heat a large skillet with olive oil and add onions and garlic. Sauté for 3 minutes then add sliced bell peppers and sautee for another 5 minutes, stirring constantly. Stir in steak and worcestershire sauce, sprinkle with salt and pepper, and let cook until meet is no longer pink (about 6-8 minutes).

3. Cut potatoes in half and scrape out the inside (about 1/2 inch thick from the skin). Spread about 1 Tbsp of sour cream on bottom and 1 slice of provolone cheese. Fill potatoes with meat evenly with steak. Top with another slice of provolone cheese and put in oven to bake for another 10 minutes, or until cheese is melted. Once melted, top with chopped green onions.


Sprinkled Oreo Cookie Popcorn


There are so many ways to spice up popcorn and this is one super way! With only 4 simple ingredients how can you go wrong? Especially for those of you who have sweet tooths. You can also easily double the recipe for more as well 🙂

Yield: 12

1 bag of popped plain popcorn
1 cup melted white chocolate
20 Oreo cookies; crushed (I used birthday cake edition Oreos)
1/4 cup sprinkles

1. Pop your popcorn and spread it out on a cookie sheet lined with foil. Drizzle the melted chocolate and sprinkle in the cookies and sprinkles. Mix with a spoon until evenly coated. If you are having a difficult time getting everything combined, mix with your hands! Let cool for 20 minutes until chocolate has cooled and enjoy this delicious crunchy sweet treat!
